Outback-Style BBQ Lamb Cutlets

Ingredients
8 lamb cutlets
2 tablespoons olive oil
1½ tablespoons Smokey Joes Outback Seasoning
Fresh lemon, for serving
Method
Prepare the lamb
Pat the lamb cutlets dry with paper towel and place them in a bowl. Add the olive oil and turn the cutlets until evenly coated.
Add the seasoning
Sprinkle the Smokey Joes Outback Seasoning over both sides of the lamb. Gently rub the seasoning into the meat so it is evenly covered. Allow the lamb to sit for around 10–15 minutes while the BBQ heats.
Heat the BBQ
Preheat your BBQ to a high temperature. A properly heated grill will help create a deliciously browned exterior while keeping the lamb tender inside.
Cook the cutlets
Place the lamb onto the hot BBQ and cook for approximately 2–3 minutes per side for medium-rare, depending on the thickness of the cutlets and your preferred level of doneness.
Rest before serving
Remove the lamb from the BBQ and allow it to rest for around 5 minutes. Finish with a squeeze of fresh lemon just before serving.
Serving Suggestion
Serve these smoky, seasoned lamb cutlets with grilled vegetables, a fresh garden salad, roasted potatoes or your favourite BBQ sides.
Tip: For an extra flavour boost, prepare the lamb shortly before cooking and allow the seasoning time to work into the surface of the meat.
