Creamy Tuscan Chicken

A rich and comforting chicken dish packed with garlic, parmesan, spinach and sun-dried tomatoes. The chicken is seasoned with Smokey Joe’s Tuscan Seasoning, pan-seared until beautifully golden, then finished in a creamy sauce that brings everything together.

It’s an easy meal for a busy weeknight, but impressive enough to serve when you have guests. Pair it with pasta, rice or creamy mashed potato for a satisfying dinner.

Ingredients
4 boneless, skinless chicken breasts
1 teaspoon Smokey Joe’s Tuscan Seasoning
1 teaspoon salt
½ teaspoon freshly ground black pepper
3 tablespoons extra virgin olive oil
4 cloves garlic, finely chopped
¼ cup yellow onion, finely diced
½ cup sun-dried tomatoes, thinly sliced
2 cups baby spinach
1½ cups cooking cream
¼ cup freshly grated parmesan cheese


Method


Prepare the chicken

Pat the chicken breasts dry with paper towel. Season both sides with the Smokey Joe’s Tuscan Seasoning, salt and black pepper, making sure the seasoning is evenly distributed.

Brown the chicken

Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Add the chicken and cook for approximately 3–4 minutes on each side, or until nicely browned.

Transfer the chicken to a plate and set aside while you prepare the sauce.

Build the sauce

Add the remaining tablespoon of olive oil to the same pan. Add the diced onion and cook for 2–3 minutes until softened.

Stir in the garlic and sun-dried tomatoes and cook for another minute, allowing the garlic and herbs to release their flavour.

Add the baby spinach and cook briefly until it begins to wilt.

Make it creamy

Pour the cream into the pan and stir through the parmesan. Bring the sauce gently to a simmer, stirring until the parmesan has melted and the sauce starts to thicken.

Finish the chicken

Return the chicken breasts to the pan, spooning some of the creamy sauce over the top. Continue cooking for around 5 minutes, or until the chicken is completely cooked through and the sauce is rich and creamy.

Serve

Serve hot with pasta, rice pilaf or creamy mashed potato. A simple green salad or steamed vegetables also make a great accompaniment.
